![]() The analogy between tea and wine is a good one. Tea is enjoyed for its fragrance, texture and taste. When tea is brewed, if it is a good tea you will enjoy a rich, fresh and complex fragrance. If you use a glass cup, you will be able to appreciate the rich, translucent, clear colours, subtly different for every tea. Now the taste. Sip. Hold it in your mouth. Savour it. Roll it round your tongue, and then swallow. Enjoy, relax, refresh. It is said that once you have tasted a really fine cup of tea, you will not forget the taste. As a tea master has recently said to us on a recent trip, 'Drinking tea makes you happy; it calms you down but makes you attentive, it's an aid to meditation and its good for your health' and who are we to argue with a Master. |
