| White and Yellow Teas |
 Our two organic white teas, Bai Mu Dan and Swirling Mist, come from the Fujian Province of China. The leaves have a characteristic silky white down underneath, which gives the teas their name. Only the new spring buds are gathered and dried, undergoing minimal fermenting. The teas can only be made according to a traditional, hand-crafted withering process and have a delicate fragrance and a fresh, mellow sweet taste. True yellow tea is grown and cured in a remote area of China and was traditionally the Tribute tea to the Emperor. Known in Chinese as Huang Cha the uniquely pale yellow liquor is attained by the additional step in the tea process, men huan (sealing yellow).
