Generally delicate green and white teas need only 2 to 3 minutes. Black teas develop a deeper flavour over 3 to 4 minutes. Rooibos, although at its best after 3 to 4 minutes can be left for 30 minutes and then be reheated without a trace of bitterness or “stewing”. Traditional Cape farmers would simmer the leaves on the stove all day, giving a very strong and flavourful brew
