
One of China’s favourite quality teas, Lung Ching (Dragon’s Well) is in Zhejiang province, near Hangzhou’s West Lake.
The tea is grown high on the Tieh Mu mountain range. It is hand picked and hand turned in a large wok from where it gets its flat shiny appearance. Every year buyers from China and Japan assemble at the gardens to compete to buy this rare tea.
It has full round flavour, a distinctive rich, sweet and somewhat nutty taste and a slight chocolate aroma.
Directions: As this is such a delicate green tea, allow boiled water to cool for about to 3-4 minutes. Preheat the teapot and add 2-3 grams (1-1½ teaspoons) per person.
For a light and delicate flavour, allow to infuse for 2-2 ½ minutes or up to 4 minutes for a stronger cup. The leaves can be infused twice, allowing a longer time for the second infusion.
